Zucchini season will be upon us before we know it. For those who grow their own, it can something to look forward to or a curse -- what to do with all those zucchinis? You can give them away; make zucchini bread; or zucchini relish; bake, stuff, stir fry, BBQ to name a few. I also shread them in 1 cup portions and freeze for later use in stir fries, spaghetti sauce, zucchini bread or muffins. Seeds can also be roasted for snacking or in other recipes.
Zucchini or also known as summer squash, is an excellent source of Vitamin C and manganese as well as a good source of Vitamin A. The have good antioxidant properties, blood sugar and anti-inflammatory benefits as well.
